I apologize in advance for not sharing a pic today but as soon as I finished the muffins, my test kitchen audience devoured them! I&#8217;ll try to make another batch this weekend and post a pic. A note on the ingredients&#8230;<\/span><\/b><\/p>\n<ul>\n<li><b><span style=\"font-weight: normal;\">the recipe utilizes <b><i>coconut flour <\/i><\/b>&#8211; a gluten-free, fiber filled and low glycemic option to wheat flour. For the uninitiated, the <a href=\"http:\/\/www.glycemicindex.com\/\">glycemic index <\/a>refers to how quickly a particular food triggers a rise in blood glucose levels. Increased fiber = slower release.&nbsp;<\/span><\/b><\/li>\n<li><b><span style=\"font-weight: normal;\">coconut flour is a little pricey at 6.99\/bag but the recipe only uses 1\/2 cup for 9 muffins. <\/span><\/b><b><span style=\"font-weight: normal;\"> And, if you\u2019re missing baked goods while eating a gluten-free or low glycemic diet, the extra bucks may feel worth it.<\/span><\/b><\/li>\n<li><b><span style=\"font-weight: normal;\">This recipe is filled with GREAT Fat &#8211; coconut oil <i>and <\/i>good protein in the form of 3 eggs. <\/span><\/b><\/li>\n<\/ul>\n<p><b><span style=\"font-weight: normal;\">I made a few changes to Kimi&#8217;s recipe, including adding vanilla, decreasing the cloves and apples and adding apple cider vinegar and zucchini. <\/span><\/b><\/p>\n<p><b><span style=\"font-weight: normal;\"><i>Now, before we start baking, a quick tutorial about muffin<\/i>s.<\/span><\/b><br \/><b><span style=\"font-weight: normal;\">1. A great secret to all good baking is to be sure your ingredients are all about the same temperature before you combine them. You don\u2019t want hot honey and oil hitting cold eggs or you\u2019re going to have a sugary omelet on your hands! ICK!<\/span><\/b><br \/><b><span style=\"font-weight: normal;\">2. Kimi mentioned in her recipe not to exceed the recommended amount of fruit. Otherwise, these muffins will be wet. I can attest to this from personal experience.<\/span><\/b><br \/><b><span style=\"font-weight: normal;\">3. Most of all &#8211; do not, I repeat, do NOT over-mix muffins. You simply want to combine the ingredients and make sure they don&#8217;t have big clumps of dry flour. Be gentle. <br \/><\/span><\/b><\/p>\n<div style=\"background-color: #f9cb9c;\"><\/div>\n<div style=\"background-color: #f9cb9c;\"><b>Spiced Apple Muffins <\/b>Makes 9 Muffins  <\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\"><b><i>Wet ingredients<\/i><\/b><\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\">1\/3 cup of coconut oil<br \/>1\/4 cup of honey <\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\">3 large eggs \u2013 break into a bowl right away so they\u2019ll be close to room temp for mixing<\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\">1 t. apple cider vinegar<\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\">1 t. vanilla (optional)<\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\"><\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\"><b><i>Dry ingredients<\/i><\/b><\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\">1\/2 cup of coconut flour<br \/>1 teaspoon baking soda<br \/>1\/4 teaspoon fine sea salt <br \/>1 teaspoon ground cinnamon*<br \/>1\/2 teaspoon ground nutmeg<br \/>a pinch of ground cloves (optional)<br \/>* if you don&#8217;t have all the spices, sub 1 1\/2 t. pumpkin pie spice <\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\"><\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\"><b><i>The good stuff!<\/i><\/b><\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\"><span style=\"font-size: xx-small;\">1\/2<\/span> c shredded apples<\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\">\u00bc c shredded zucchini<\/div>\n<div class=\"MsoNormal\" style=\"background-color: #f9cb9c; margin-left: 0.5in;\">\u00bd c. chopped walnuts or pecans for topping<\/div>\n<div style=\"background-color: #f9cb9c;\">1. Preheat the oven to 350 degrees<\/div>\n<div style=\"background-color: #f9cb9c;\">2. Prep the muffin tins with baking cups or by oiling and flouring the tins.<\/div>\n<div style=\"background-color: #f9cb9c;\">3. In a medium saucepan, melt, thoroughly whisk together &amp; set aside to cool. It looks like gooey syrup.<\/div>\n<ul style=\"background-color: #f9cb9c;\">\n<li><span style=\"font-family: Symbol;\"><span style=\"font: 7pt &quot;Times New Roman&quot;;\"><\/span><\/span><span dir=\"LTR\">Coconut oil <\/span><\/li>\n<li><span style=\"font-family: Symbol;\"><span style=\"font: 7pt &quot;Times New Roman&quot;;\"><\/span><\/span><span dir=\"LTR\">honey<\/span><\/li>\n<\/ul>\n<div style=\"background-color: #f9cb9c;\">4. Sift together the dry ingredients. Coconut flour can be a little lumpy so sifting will save you from over-mixing the muffins when combining the wet and dry ingredients. Measure your ingredients straight into the sifter.<\/div>\n<ul style=\"background-color: #f9cb9c;\">\n<li><span style=\"font-family: Symbol;\"><span style=\"font: 7pt &quot;Times New Roman&quot;;\"><\/span><\/span><span dir=\"LTR\">coconut flour<\/span><\/li>\n<li><span style=\"font-family: Symbol;\"><span style=\"font: 7pt &quot;Times New Roman&quot;;\"><\/span><\/span><span dir=\"LTR\">baking soda<\/span><\/li>\n<li><span style=\"font-family: Symbol;\"><span style=\"font: 7pt &quot;Times New Roman&quot;;\"><\/span><\/span><span dir=\"LTR\">sea salt<\/span><\/li>\n<li><span style=\"font-family: Symbol;\"><span style=\"font: 7pt &quot;Times New Roman&quot;;\"><\/span><\/span><span dir=\"LTR\">cinnamon, nutmeg and cloves <\/span><\/li>\n<\/ul>\n<div style=\"background-color: #f9cb9c;\">5. In a separate bowl, <b><i>gently<\/i> <\/b>whisk wet ingredients together till just mixed.<\/div>\n<ul style=\"background-color: #f9cb9c;\">\n<li>&nbsp;<span dir=\"LTR\">Eggs<\/span><span style=\"font-family: Symbol;\">&nbsp;<\/span><\/li>\n<li><span style=\"font-family: Symbol;\"><span style=\"font: 7pt &quot;Times New Roman&quot;;\">&nbsp;<\/span><\/span><span dir=\"LTR\">Honey and coconut oil<\/span><span style=\"font-family: Symbol;\"><span style=\"font: 7pt &quot;Times New Roman&quot;;\">&nbsp;<\/span><\/span><\/li>\n<li><span style=\"font-family: Symbol;\"><span style=\"font: 7pt &quot;Times New Roman&quot;;\"> <\/span><\/span><span dir=\"LTR\">Vinegar<\/span>&nbsp;<span style=\"background-color: #fce5cd;\"><\/span><\/li>\n<\/ul>\n<div style=\"background-color: #f9cb9c;\"><\/div>\n<div style=\"background-color: #f9cb9c;\">6. Add dry ingredients to wet and combine with a few swift strokes (12 maximum!)<\/div>\n<div style=\"background-color: #f9cb9c;\">7. Pour into muffin tins and sprinkle with some chopped nuts.<\/div>\n<div style=\"background-color: #f9cb9c;\">8.
