{"id":56,"date":"2010-10-15T22:23:00","date_gmt":"2010-10-15T22:23:00","guid":{"rendered":"http:\/\/www.organicmamacafe.com\/?p=56"},"modified":"2010-10-15T22:23:00","modified_gmt":"2010-10-15T22:23:00","slug":"homemade-almond-butter","status":"publish","type":"post","link":"https:\/\/www.organicmamacafe.com\/home\/2010\/10\/homemade-almond-butter\/","title":{"rendered":"Homemade Almond Butter"},"content":{"rendered":"<p>I&#8217;ve had a lot of requests for the homemade almond butter recipe that I took to <a href=\"http:\/\/organicmamacafe.blogspot.com\/2010\/09\/organic-mama-on-abc15s-new-show-smart.html\">my visit to ABC15&#8217;s Smart Families<\/a>. It&#8217;s so easy, it&#8217;s almost not a recipe!<\/p>\n<p>I make my own almond butter because I can monitor exactly what goes into it (oil, salt, sugar etc) and it&#8217;s cheaper as well. If you didn&#8217;t realize that almond\/peanut butters often have unhealthy things in them, check the ingredient list on the one in your pantry. Surprise! <\/p>\n<p>Here are a few of the ways I use almond butter &#8211; usually in place of peanut butter<br \/><i>Apples and almond butter<\/i><br \/><i>As protein in a fruit smoothie<\/i><br \/><i>Ants on a log (celery boats filled with almond butter and topped with organic raisins)<\/i><br \/><i>Almond butter and honey (or jam) sandwich<\/i><br \/><i>On toast for breakfast <\/i><\/p>\n<p><\/p>\n<div style=\"background-color: #eeeeee;\"><u><b>Make Homemade Almond Butter<\/b><\/u><\/div>\n<div style=\"background-color: #eeeeee;\"><\/div>\n<div style=\"background-color: #eeeeee;\">1. Place 3-6 cups of <a href=\"http:\/\/organicmamacafe.blogspot.com\/2010\/09\/crispy-nuts.html\">crispy nuts<\/a>* in the food processor, depending on how big your food processor** is.&nbsp; Don&#8217;t fill it much more than half or the nuts won&#8217;t pulverize properly.<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><a href=\"http:\/\/3.bp.blogspot.com\/_FLueuaKLinI\/TLjOmIyDdqI\/AAAAAAAAARU\/Fje25Spr-kc\/s1600\/IMG_20101015_142404.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"320\" src=\"http:\/\/3.bp.blogspot.com\/_FLueuaKLinI\/TLjOmIyDdqI\/AAAAAAAAARU\/Fje25Spr-kc\/s320\/IMG_20101015_142404.jpg\" width=\"239\" \/><\/a><\/div>\n<\/div>\n<div style=\"background-color: #eeeeee;\">2. Turn it on &#8211; high (see &#8211; not brain surgery!).&nbsp;<\/div>\n<div style=\"background-color: #eeeeee;\">3. Let the processor go &#8211; you might stop and pulse it for a while &#8211; until the nuts are pulverized. If they look like the pic below &#8211; keep going a few seconds longer. But, remember that almonds are going to be a little chunkier than peanuts. <\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><a href=\"http:\/\/4.bp.blogspot.com\/_FLueuaKLinI\/TLjPH8VNm4I\/AAAAAAAAARY\/pm8LM1rmZWc\/s1600\/IMG_20101015_142738.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"320\" src=\"http:\/\/4.bp.blogspot.com\/_FLueuaKLinI\/TLjPH8VNm4I\/AAAAAAAAARY\/pm8LM1rmZWc\/s320\/IMG_20101015_142738.jpg\" width=\"239\" \/><\/a><\/div>\n<p><\/div>\n<div style=\"background-color: #eeeeee;\">4. Continue to process the nuts till they turn into almond butter. If you&#8217;re impatient like me and you don&#8217;t want to burn out your machine, add a little organic olive oil (1-3 T) until it&#8217;s &#8220;buttery&#8221;. As usual, just add a little at a time so you don&#8217;t end up with almond soup. You can substitute unprocessed, organic virgin coconut oil for the olive oil &#8211; but the butter will become pretty hard in the fridge if you do.<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><a href=\"http:\/\/3.bp.blogspot.com\/_FLueuaKLinI\/TLjPyPmRobI\/AAAAAAAAARc\/hHM0KA9qe7k\/s1600\/IMG_20101015_143922.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"320\" src=\"http:\/\/3.bp.blogspot.com\/_FLueuaKLinI\/TLjPyPmRobI\/AAAAAAAAARc\/hHM0KA9qe7k\/s320\/IMG_20101015_143922.jpg\" width=\"239\" \/><\/a><\/div>\n<p><\/div>\n<div style=\"background-color: #eeeeee;\">5. Store in the refrigerator. I can&#8217;t really say how long it will keep &#8211; because it never lasts long enough at our house to go bad.<\/div>\n<div style=\"background-color: #eeeeee;\">*You <i>can <\/i>just use raw almonds out of a bag &#8211; but the <a href=\"http:\/\/organicmamacafe.blogspot.com\/2010\/09\/crispy-nuts.html\">crispy nut recipe<\/a> gives the almonds a richer, toastier flavor<\/p>\n<p>**You can also use a Vitamix to do this but not everyone has one of these incredible machines. <\/p><\/div>\n<p>I said this in my post on <a href=\"http:\/\/organicmamacafe.blogspot.com\/2010\/10\/homemade-hummus.html\">homemade hummus<\/a> &#8211; but I&#8217;ll say it again. A food processor it truly an invaluable kitchen tool and it doesn&#8217;t take up much space. If you don&#8217;t have one &#8211; you can find some great prices on Amazon &#8211; <a href=\"http:\/\/www.amazon.com\/Cuisinart-DLC-2009CHB-Processor-Brushed-Stainless\/dp\/B001413A0Q\/ref=sr_1_4?ie=UTF8&amp;qid=1287171209&amp;sr=8-4\">here<\/a>.<\/p>\n<p>Just a note on almonds&#8230;<br \/>As of 2007, almonds sold by handlers (i.e. non-growers) in the United States are required by law to be &#8220;pasteurized&#8221;. The intention of the pasteurization is to limit possible outbreaks of salmonella poisoning in the general public. Sadly, the method &#8211; super steaming the outside of the nut or gassing it &#8211; invalidates the &#8220;raw&#8221; categorization. These nuts go rancid a lot faster. Thankfully, the law does allow you to buy &#8220;real&#8221; raw nuts directly from growers.<a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=dailytip&amp;dbid=324\">Here<\/a>&#8216;s a well written explanation of the process.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve had a lot of requests for the homemade almond butter recipe that I took to my visit to ABC15&#8217;s Smart Families.
